Yellow Squash Fritters
Ingredients
- 2lbs Yellow Squash (2-3)
- 1 teaspoon sea salt, plus extra to taste
- 2 green onions, split lengthwise and sliced thin
- 1 large egg, lightly beaten
- Freshly ground black pepper
- 1/4 cup maninis all-purpose flour
- 1/2 teaspoon baking powder
- Canola oil, for frying
- 1 cup greek yogurt
- 1 tablespoon chopped chives
- 2 tablespoons lemon juice
- 1/4 teaspoon lemon zest
- 1 Pinch of salt
- 1 tsp crushed garlic
